The Zoiglbraurie is similar to a coopertive in that community involvment is a key element. Much like co-ops, members enjoy a shared resource, discount pricing and shared risk.
Unlike a typical brewery, however, the Zoiglbraurie and its members have equipment scattered all over town. Normally, when beer is fermenting and the tanks are full, there cannot be any mashing or cooking becaue there is no place to store the wort when done.
Many Zoiglbrauie members have their own fermenters and, when finished preparing the wort, they take it back to their place for finishing - freeing up the brewery to cook again for the next member.
When the beer is finished, the brewer hangs a sign ("Zoigl") to let everyone know that they should come on over and have a few - until it's gone. The town, therefore, becomes a traveling pub !
